Ingredients:
• 4 medium sweet potatoes, peeled and diced
• 1 can of chickpeas, drained and rinsed
• 1 red bell pepper, diced
• 1 yellow onion, diced
• 1 cup cherry tomatoes, halved
• 1/4 cup cilantro, chopped
• 2 limes, juiced
• 2 tablespoons olive oil
• 1 teaspoon cumin
• 1 teaspoon chili powder
• Salt and pepper to taste
Directions:
1. Set oven to 400 °F.
2. Use parchment paper to cover a baking sheet.
3. On baking sheet, equally distribute sliced sweet potatoes.
